Savour the Season: Simply Food By Mandy’s Chicken Mushroom & Spinach One Pot

She’s been whipping up some kitchen magic in our vibrant space while her brand-new Tom Howley kitchen takes shape. Lucky for us, Mandy’s generously shared a recipe that screams winter comfort – say hello to the Chicken Mushroom & Spinach One Pot.
This easy-to-prepare dish perfectly captures the cosy vibes of the season. Packed full of flavour with minimal ingredients, it’s a winter warmer that’s bound to become a family favourite.
Chicken Mushroom & Spinach One Pot
Serves 4
Ingredients
2 onions – finely chopped
3 cloves garlic – crushed
4 chicken legs
150g mushrooms – chopped
1 teaspoon wholegrain mustard
4 tablespoons creme fraiche
2 handfuls fresh spinach leaves
A large pan that can be transferred to an oven
Method
- Preheat your oven to 200 degrees Celsius for conventional ovens, or 180 degrees Celsius for fan ovens.
- Begin by placing the onions and garlic in a pan, generously drizzling them with olive oil, and laying the chicken on top.
- Season the dish generously and let it cook in the oven for 45 minutes.
- Carefully remove the chicken from the oven and set it aside on a plate.
- Place the pan on a medium heat and add the mushrooms. Cook them for approximately 5 minutes or until fully cooked.
- Add the mustard and creme fraiche to the pan, seasoning, and gently warm the mixture on low heat.
- Toss in the spinach and cook for an additional 2 minutes before reintroducing the chicken to the pan.
- Serve your delicious dish with a side of crusty bread, rice, or mashed potatoes.
